Awesome photos. This is a Robber Fly and they are amazing predators. While actively flying they will capture and stab their prey with their proboscis (that sharp beak-like mouthpart hidden in its beard) & then perch to feed.
In my copy of R Farrow, Insects of South Eastern Australia there is almost a carbon copy of my photos here identifying them as being of a wasp- mimicking robber fly Daptolestes limbipennis (Asilidae:Daogononae).
