I'd guess one species, with the caps becoming paler as the cells in the cap expand. You see the same effect with a balloon. It can be quite dark before you start blowing into it, but much paler when fully inflated. Ypou could say there's a fixed amount of colour available to the balloon/mushroom and, once expanded, that fixed amount of colour is spread over a larger area and so must become paler.
